KYU Now Open in Wynwood 

 

“Wood-fired, Asian inspired cuisine” fits the bill at the brand new KYU on 25th Street in Wynwood. Chef Michael Lewis and General Manager Steven Haigh both formerly of Zuma, “features a diverse menu, a focus on professional yet relaxed service and a commitment to green practices.” The other night I heard a food writer who has dined there refer to it as “Zuma at a 30% discount.” That sounds pretty damn good.

 

Chef Lewis was appointed Chef de Cuisine under Jean-Georges at the age of 25, has worked under chefs Eric Ripert and David Bouley, and most recently helmed the kitchen at Zuma. His menu is inspired by Japanese and Korean yakiniku (translated to “grilled meat” in Japanese) as well as elements of American Southern barbecue (using the traditional “slow and low” technique). Menu highlights include Duck Breast “Burnt Ends” with yuzu pickles; Wagyu Beef Brisket with black shichimi pepper; Thai Fried Rice Stone Pot; Heirloom Tomatoes with red onion and shiso; and “new-style sashimi” – all prepared in a glossy open exhibition kitchen.
